Headcannon #1
Inklings are born with a specific color. This color will be fixed for life, unless... special cases.
These colors will be reflected by the color of their tentacle tips. Callie, Marie and a few others are exceptions, where this law is the opposite: their tentacles are their birth color while their tips reflect their current ink color.
After a battle, the colors of their tentacles and gear will change color. But, the colors will return to the Inkling's birth color overnight. Basically, they can't get another color.
Here are the exceptions.
If an Inkling joined a competitive quad, they'll have to go through a squad spawner which'll change them into the squad's ink color. That color will become their permanent ink color and that'll be the color they're in the next day they woke up. However, their tentacle tips will remain the same color. If either the inkling is kicked out of the squad for whatever reason or the squad either unregistered, they are allowed to either keep their current permanent ink color or go through the squad spawner in order to restore their colors.
Some inklings are unable to change back to their birth/squad colors overnight. This is a minor defect that no one bothers.
Splatfest Tees will also help keeping an Inkling's ink color during a Splatfest.
As an Inkling ages, their colors will started to fade and eventually turned into white by the time they could no longer produce enough ink to fight.
Such rules can be applied to Octolings too. However, An Octoling's tentacles will remain red (or black for elites) instead of dark magenta overnight.

Most Octarians are full life forms themselves... aside from a two.
Octostamps are half-mechenical-- their weak bodies needed ink to live but they can still fight thanks to the box that hold their weak bodies in.
The Octoweapons are full-mechenical.

Head cannon #3
An Octozooka (Inkzooka :3) is an exclusive weapon to Octarians. Octozookas are main weapons and functions a bit different from Inkzookas.
A Slosher is an exclusive weapon to Inkling though, so there is a balance after all.
However, a roller-like weapon known as the Stomper was recently made for 'Stamp Octolings. It does not function like a roller, as you can't roll it around, but it can slam down on an enemy, making it a one-hit KO. It slams down as fast as a Carbon Roller can but the coverage is wider than that of a Dynamo Roller.
Octarians also have an exclusive ability: "Fly". They're reserved for 'Copter, 'Bomber and 'Striker Octolings. This ability allows them to hover above the ground, hence will not take stepping in enemy ink damage, however this greatly reduces their movement speed. Inklings have two abilities Octarians don't have: Open Gambit and Last-Ditch Effort.

Ooh, I have quite a few: Besides the train station, Inkopolis and its surrounding areas have "warp pads" similar to those in Octo Valley. They allow an Inkling to super jump quicker and farther to get to places faster.
Turf War arenas are simulations, the actual locations still exist, but aren't used anymore as there are so many Inklings playing turf and not enough room, as well as satisfying the ranked materials (like the Rainmaker).
The Rainmaker was actually an older version of the Inkzooka that was used in the Great Turf Wars, but was later modified to be used in a ranked mode. The protective bubble was to protect it from being used by Octarians before, but that was also changed in its ranked mode version.
Different species of Inkling and Octoling do exist, based on the various squid and octopus species. However, it's a bit hard to tell what species one is unless they have certain qualities that make it apparent (like a firefly squid's glowing freckles, or a giant squid's, well, size).
Most young Inklings get their money ("cash") from Turf War. This is mainly used for gear and weapons.
Inklings and Octolings can usually repair their bodies by laying in their own ink for a while, most able to get back their limbs, even. This takes a long time.

Headcannon #12
Inklings and Octarians can heal by regenerating with the help of ink. However, scars can be formed if the wound is infected before they let them heal. The infection is not necessary to make one ill, it just means the wound cannot heal properly and thus leave a scar.
Some Inklings/Octarians are born with a minor defect where all wounds will leave scars.
And the opposite happens too: some Inklings/Octarians are born with a slight mutation where they can heal all wounds without leaving a scar.

Not all humans went extinct. They're smart enough to live on the mountains far away from the current civilisations. However, the number of alive humans is a lot less than the number 12,000 years ago. And due to the limitation on resources on mountains, they are forced to give away some of their civilization and cultures. Humans are too scared to leave the mountains, since they are not sure whether the flood is gone. So far, no one had discovered humans. But if they do, it'll be very big news that'll leave the world in chaos, as if humans find real-life dinosaurs roaming around.

Bonus with the previous head cannon: Due to Humans digging up fossils of Dinosaurs, and some are still kept well under the soil, beings in the Mollusc Era mistakenly believed that Dinosaurs lived with humans and humans somehow tamed these gigantic beings.

Headcannon #14
Eating habits:
Un-evolved sea creatures still live underwater, and carnivore beings that live on the surface eat those. Takoyaki and Ikayaki, an alternative version of Takoyaki, are two ways Inklings and Octarians love to consume these un-evolved ancestors.
And yes, they are willing to consume any type of sea creature, whether they're their ancestor or not. Some ancestor species went extinct and hence these evolved versions of them will find eating their ancestor species disgusting. One of them is Crusty Sean, as Tiger Prawns were long gone. In the Human era, most humans found eating their ancestor species, monkeys and apes, disgusting. However, this doesn't apply to beings in the Mollusc Era.
And that's why the JP Splatfest, Squid VS Octopus still makes sense
Recipes Humans invented on consuming sea creatures somehow landed into the Mollusc era and the beings started to cook like them.
Some species, whose ancestor specie is originally either carnivore or herbivore, evolved to become omnivores. They can both consume meat and plants. Inklings and Octarians are examples.

Headcannon #16
Despite popular belief, Octo Valley is NOT next to Inkopolis. Otto Valley is underwater and the Octarians used their technology to keep the sea levels low enough to not drown them. The city seen in the distance is not Inkopolis, but Tokyo, the city in Japan that once hold thousands of humans, now submerged in water and abandoned.
The reason why they never dared to move over is because of the technology used to hold all those water away from the valley. It's a field that will cut off power sources, making any aircrafts passing through to crash. They have to give up one of them, so the chose to stay in the cursed valley rather than leaving.

Headcannon #18
The Great Octoweapons are controlled by loyal officers inside. They reach out their tentacles, trying to grab more Zapfishes and make the weapon more powerful. When you splat their tentacle, they splat, and shortly after respawn inside. The splat damaged the machine. The tried to reach for more zap fishes to fix the damage but they never realise there's only one which is inside the Octoweapon. After 3 splats the machine overloads and explodes.
